CHEESY POTATO SOUP
WHAT YOU WILL NEED:
7 medium potatoes, peeled and cubed Enough water to cover potatoes while cooking 1 pint sour cream(you can use fat free or reduced fat, just not as creamy) 1 lb Mexican Velveeta, cubed Crumbled Bacon or real bacon bits Diced green onions
Instructions:
Cover potatoes with water in a large pot or dutch oven. When potatoes are tender add sour cream and cubes of velveeta. Cook over low heat, stirring occasionally. When cheese is melted, soup is ready. Top with bacon and green onions.
